  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup chopped spinach
  • Salt and pepper, to taste

  1. Sprinkle both sides of the chicken breasts with garlic powder, thyme, cayenne pepper, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on both sides, about 5 minutes per side.
  3. Remove chicken from skillet and set aside. Add chicken broth to skillet and bring to a boil, scraping up any brown bits stuck to the bottom of the skillet.

  • 1/2 tsp salt

  • 2 eggs, beaten
  • 1 cup seasoned bread crumbs
  • 1 cup grated Parmesan cheese
  • 1/4 cup unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F. Grease a 9x13 inch baking dish.
  2. Pound chicken breasts to an even thickness, about 1/2 inch thick.
  3. In a shallow bowl, mix together flour, garlic powder, salt, and pepper. In a separate shallow bowl, beat eggs. In a third bowl, mix together bread crumbs and Parmesan cheese.
  4. Dredge each chicken breast in the flour mixture, then dip in the beaten eggs, then coat in the bread crumb mixture. Place on prepared baking dish.
  5. Drizzle melted butter over each chicken breast.
  6. Bake for 25-30 minutes, or until chicken is cooked through and coating is crispy and browned.
